How Does the Satellite System Work?
Elementary meals are prepared and packaged at the Lahser High School production kitchen.
Meals are delivered to each elementary satellite kitchen daily to ensure freshness and quality of products served.
Food Products received at the elementary schools are stored at the appropriate temperatures for food safety. Each kitchen has a set of standard operating procedures (SOP) to guide the employees on the food handling procedures.
A food service server cooks the food to the appropriate temperature, sets up the cafeteria serving line, operates the debit card computer system and cleans up. Each elementary building provides assistance from other staff members during serving.
Why Use a Satellite Meal System?
A production kitchen (central kitchen) is cost effective compared to operating individual kitchens.
Central kitchens increase productivity and reduce the number of employees and labor hours needed.
Packaging separate meal components allow for the best ability to heat each food component to the proper temperature
Students can make decisions on the food items they prefer.
This system reduces food waste because students do not have to take food components they will not eat.
